EXTRA VIRGIN OLIVE OIL

Oil of superior quality, stone-pressed, unfiltered.

The Papalino Oil is slightly fruity, with a straw yellow-gold colour with a hint of green, reminiscent of the soft green hills of Castiglione in Teverina, and the alta Tuscia Viterbese area.
 
The olive variety "Leccino" and "Frantoio" are typical of the area between the border of Lazio and Umbria.

They are scrupulously collected by hand and taken to the mill where a few hours later are pressed to obtain an oil with a low acidity and unique organoleptic characteristics.

Particularly recommended with fish or meat carpaccio, due to its fruity sensations, it pairs well with all dishes.


It is slightly opaque being extracted by traditional stone pressing.

SAUCES & CREAMS

SaucesIn addition to the precious Extra Virgin Olive Oil of Castiglione in Teverina, the Farm Papalino produces and selects a wide variety of specialties and local products linked to the territory of Tuscia. 

Processing and packaging: After six months min. seasoning, the product is pitted by a stoner, worked alone or blended from time to time through cutter with other ingredients, placed in glass jars with hopper dispenser.

The vessels closed by a linear capping machine are pasteurized in stainless steel baskets, then immersed in water up to boiling at about 94°.
 
Storage: 24 months in a cool, dry place away from heat sources.

Olive Creams
The creams are obtained by processing our olive and our extra virgin olive oil, adding from time to time other ingredients (orange, honey, lemon, etc.) to make the product more palatable and adjustable to the preparation of a wide range of recipes.

After at least 6 months of aging in water and salt, the product is pitted by a stoner, mixed with cutter, put in glass jars with hopper dispenser.

The vessels closed by a linear capping machine are pasteurized in stainless steel baskets, then immersed in water up to boiling at about 94°.
