The “PAPALINO Farm” is located in Castiglione in Teverina in the alta Tuscia of Viterbo area, just a few kilometers from Orvieto (Umbria).
The company was founded in 1960 when Ercole, the father, decided to purchase the property in spite of financial difficulties.
The farm has hardly changed over the years. Its family run management cultivated cereals and grapes until 1997, when Ermino, the son, began to modernize the business and then they started to produce high quality oil and wine, maintaining the ancient flavors.
The farm is situated in one the most important, high quality olive oil and wine producing areas in the province of Viterbo. The oil and wine produced here were also enjoyed by the ancient Etruscans who lived on these lands.
The characteristics of the area, the southern exposure and the farm dimensions allow the family to manage the business and achieve the best results from our cultivation.
The grape variety in our vineyards is typical of the area, and from this variety we carefully select bunches of grapes in the month of July in order to have grapes with the best characteristics. So we obtain a fresh, fruity, white wine and a full bodied red wine.
Our olive groves are also typical of the surrounding area, in which we cultivate leccino and frantoio and a small percentage of Pendolino and Moraiolo.
The olive harvest is done strictly by hand and the milling occurs within 24 hours of collecting, to obtain a very light, fruity and highly digestible oil with a degree of acidity inferior to 1%.
